A Taste of Tradition: Andhra-Style Chicken Fry by Mrs. Vijaya Rajesh

  • Start by marinating 500g of chicken with turmeric, red chili powder, coriander powder, and salt. Let it sit for 30 minutes.
  • In a pan, heat oil and sauté sliced onions and green chilies until golden brown. Add ginger-garlic paste and cook for another minute.
  • Add the marinated chicken and cook for 10-12 minutes until done.
  • Mix in garam masala, black pepper, and curry leaves, frying for 5-7 minutes until crispy.
  • Finish with fresh coriander and serve hot with lemon wedges. This dish brings a taste of Andhra to my home and is perfect for impressing guests with minimal effort.

Though I’m from Hyderabad, My Andhra roots draw me to its bold flavors, especially in this Andhra-style chicken fry. It’s quick, easy, and always a crowd-pleaser. This dish is extra special in my home because it’s my daughter’s favorite. I hope it becomes a favorite at your table too!
