Kerala Style Chicken curry

Recipe by Deepthi Binu

  • 1.Make Garam Masala: Roast fennel, pepper, cloves, cardamom, star anise, and cinnamon. Cool and grind.
  • 2.Sauté Base: In coconut oil, sauté whole spices, onions, curry leaves, and ginger-garlic paste.
  • 3.Cook Chicken: Add spices, salt, tomatoes, green chilies, and chicken. Add water, cover, and cook 15 mins.
  • 4.Finish Curry: Add pepper, ground garam masala, coconut milk, and water. Simmer 5 mins.
  • 5.Tempering: Sauté mustard, shallots, coconut slices, and curry leaves in oil. Add to curry and serve with steamed rice or chapati.
