Green Chilli Chicken with drum stick Recipe

Ingredients
· Chicken – 4 kg (cut into medium pieces)· Garlic – 250 g (chopped)
· Ginger – 250 g (chopped)
· Green chillies – 200 g
· Spearmint (pudina) – 1.2 kg (½ kg + 700 g)
· Coriander leaves – 1 large bunch
· Curry leaves – a few
· Cloves – 10
· Cardamoms – 10
· Salt – 2 tbsp (adjust to taste)
· Black pepper powder – 2 tsp
· Turmeric powder – 2 tsp
· Coriander powder – 2 tbsp
· Dry coconut powder – 2 tbsp
· Ginger-garlic paste – 200 g
· Oil – 800 ml (400 ml + 400 ml used in two stages)
· Water – 1 litre (½ litre + ½ litre)
· Drumsticks – as required
Step 1: Make the Green Masala
1. Heat a little oil in a pan.2. Add chopped garlic and ginger; fry for 5 minutes until fragrant.
3. Add green chillies, curry leaves, and pudina; sauté for 5 minutes.
4. Add coriander leaves and cook briefly.
5. Let the mixture cool, then grind it into a smooth paste. Set aside.
Step 2: Cook the Chicken
6. Heat 400 ml oil in a large vessel.7. Add cloves and cardamoms; fry for a few seconds.
8. Add chopped green chillies and onions; cook until golden brown.
9. Add salt, pepper, and ginger-garlic paste; cook for 5 minutes.
10. Stir in turmeric powder.
11. Add chicken pieces and mix well.
12. Add coriander powder and dry coconut powder.
13. Pour ½ litre water and cook until chicken is half done.
Step 3: Add the Green Masala
14. Add the prepared green masala paste to the chicken.15. Pour the remaining ½ litre of water; mix well.
16. Add drumsticks and cook for 10–15 minutes until chicken and drumsticks are fully cooked and oil separates from the gravy.
