Kerala Style Chicken curry

- Make Garam Masala Roast fennel, pepper, cloves, cardamom, star anise, and cinnamon. Cool and grind.
- Sauté Base In coconut oil, sauté whole spices, onions, curry leaves, and ginger-garlic paste.
- Cook Chicken Add spices, salt, tomatoes, green chilies, and chicken. Add water, cover, and cook 15 mins.
- Finish Curry Add pepper, ground garam masala, coconut milk, and water. Simmer 5 mins.
- Tempering Sauté mustard, shallots, coconut slices, and curry leaves in oil. Add to curry and serve with steamed rice or chapati.
