Fried Egg Idli, Made with Leftover Idlis

Ingredients
- 3–4 leftover idlis, chopped into small pieces
- 2 eggs
- 1 tsp oil
- 1 small onion, finely chopped
- 1 green chilli, finely chopped
- A pinch of turmeric powder
- Salt to taste
- Tadka/tempering of your choice (mustard seeds, curry leaves, etc.)

Method
- Heat 1 tsp oil in a pan and prepare the tadka.
- Add chopped onions and green chilli; sauté until the onions turn soft.
- Add turmeric and salt, and mix well.
- Crack the eggs into the pan and scramble lightly.
- Add the chopped idli pieces and mix gently until well coated with the egg mixture.
- Cook for 2–3 minutes, stirring occasionally.
- Serve hot as a quick and delicious breakfast or snack.
- Garnish with fresh coriander and enjoy with chutney or ketchup.
