Fried Egg Idli

Ingredients

  • 3–4 leftover idlis, chopped into small pieces
  • 2 eggs
  • 1 tsp oil
  • 1 small onion, finely chopped
  • 1 green chilli, finely chopped
  • A pinch of turmeric powder
  • Salt to taste
  • Tadka/tempering of your choice (mustard seeds, curry leaves, etc.)

Method

  1. Heat 1 tsp oil in a pan and prepare the tadka.
  2. Add chopped onions and green chilli; sauté until the onions turn soft.
  3. Add turmeric and salt, and mix well.
  4. Crack the eggs into the pan and scramble lightly.
  5. Add the chopped idli pieces and mix gently until well coated with the egg mixture.
  6. Cook for 2–3 minutes, stirring occasionally.
  7. Serve hot as a quick and delicious breakfast or snack.
  8. Garnish with fresh coriander and enjoy with chutney or ketchup.
