Mushroom & Spinach Eggs

Method

  1. Sauté Aromatics: Heat oil or butter in a skillet over medium heat. Add chopped/crushed garlic and chopped onion. Sauté for 1–2 minutes.
  2. Cook Mushrooms: Add finely chopped mushrooms. Cook for 5–7 minutes until cooked thoroughly.
  3. Add Spinach: Stir in chopped spinach. Cook for 5–10 minutes until wilted.
  4. Season: Add salt, black pepper, and Italian herbs to taste. Mix well and spread the mixture evenly in the skillet.
  5. Add Eggs: Crack eggs on top. Lightly season eggs with salt and pepper.
  6. Cook Eggs: Cover the skillet and cook until egg whites are set.
  7. Add Cheese: Sprinkle crumbled feta cheese over the eggs. Cook for another minute.
  8. Garnish & Serve: Plate and garnish with chopped spring onion greens or coriander. Serve with toasted sourdough or bread of choice.
